Venison Cheeseburger Soup

Ingredients:
- 1 cup peeled, diced potatoes
- ½ cup vegetable oil
- 2 pounds ground venison
- 1 cup finely chopped onion
- 1 finely chopped green pepper
- ½ cup finely chopped jalapeños
- 1 cup flour
- 1 tbsp Italian seasoning
- 1 tsp salt
- 1 tsp pepper
- 1 ½ quarts beef broth
- 1 ½ pounds American cheese
Method:
- Boil potatoes until fork tender.
- Drain potatoes, cover to keep them warm.
- In a large stock pot on medium-high, heat oil.
- When the pan and oil is hot, add venison.
- As the venison is cooking, break up after 10 minutes, add onion and bell pepper, and stir.
- Once stirred, add jalapeño, flour, and seasonings.
- Cook and stir until mixed well for 3-4 minutes.
- Add broth, lower heat to medium.
- Cook and stir until heated through.
- Remove from heat.
- Add cheese one at a time to melt and stir gently.
- Add potatoes and a few finely chopped onions.
- Heat, serve, and enjoy!
- You can use 1 pound venison and 1 pound ground beef
